What with drinking far too many cocktails on a Saturday night, I was in desperate need of a filling, sugary breakfast on the Sunday. I had actually been craving pancakes all week long and so knew this was the perfect thing to get me through the morning.
This was the first time I had made fluffy, buttermilk pancakes and it couldn’t be easier! The recipe is from allrecipes.co.uk:
- 125g plain flour
- 1 teaspoon salt
- 1 teaspoon bicarbonate soda
- 1 egg
- 250ml buttermilk
- 50g butter, melted
- Preheat and lightly grease a large frying pan.
- Mix the flour, salt and bicarb together in a bowl. Add the egg, buttermilk and butter; stir together lightly, but keep it lumpy. The batter should look thick, spongy and puffy.
- Drop 5 tablespoons (75ml) of the batter onto the pan, spreading lightly with the bottom of the spoon. Cook until lightly-browned on each side, 1 to 2 minutes per side.
You can have whatever topping you fancy. I went for golden syrup (sugar fix) and blueberries (to give the illusion I was being healthy). I would highly recommend you give these a go. They’re so quick and easy and set you up for the day!
