Buttermilk Blueberry Pancakes

What with drinking far too many cocktails on a Saturday night, I was in desperate need of a filling, sugary breakfast on the Sunday. I had actually been craving pancakes all week long and so knew this was the perfect thing to get me through the morning.

This was the first time I had made fluffy, buttermilk pancakes and it couldn’t be easier! The recipe is from allrecipes.co.uk:

    • 125g plain flour
    • 1 teaspoon salt
    • 1 teaspoon bicarbonate soda
    • 1 egg
    • 250ml buttermilk
    • 50g butter, melted

Method:

  1. Preheat and lightly grease a large frying pan.
  2. Mix the flour, salt and bicarb together in a bowl. Add the egg, buttermilk and butter; stir together lightly, but keep it lumpy. The batter should look thick, spongy and puffy.
  3. Drop 5 tablespoons (75ml) of the batter onto the pan, spreading lightly with the bottom of the spoon. Cook until lightly-browned on each side, 1 to 2 minutes per side.

You can have whatever topping you fancy. I went for golden syrup (sugar fix) and blueberries (to give the illusion I was being healthy). I would highly recommend you give these a go. They’re so quick and easy and set you up for the day!

  1. oh MY…now I’m craving these lovlies! Usually we’d pour Maple Syrup (the real kind from Vermont Maple trees) on these, but I’ve just come across golden syrup at a store that sells international items 🙂 Yay!
